Super Easy Tortilla Soup (serves 8)

Kathy made this instantly famous meal for us on a weekend at Yosemite National Park. Nearly every grocery store has fresh made salsa, so let someone else mini-mice the fresh veggies and kick back to enjoy all the gastronomical rewards. Amazing flavor. 2 qts preservative free vegetable, chicken or beef broth or combination

1 pint fresh salsa (medium or mild)

1 can (13 ounce) unsweetened corn

1 can (13 ounce) black beans

1 can (13 ounce) pinto or red kidney bean

3 leaves fresh cilantro chopped or cut small with scissors

Simmer together 5 minutes to warm through. Then serve and garnish with diced avocado, crushed corn chips and a dollop of Mock Sour Cream from The Feel Good Cookbook. Ole!
