Last night I had a cranberry dream, where crans, pineapple, marshmellos and cream did a happy dance in my ice cream freezer and came out as mounds of tangy, sweet, confection nirvana. I know its winter and all, but if you’re a cranberry lover like me, you HAVE to try this sugarfree, dairyfree, marshmello free version, and take rosy red cranberries to a new level of love.
1 can frozen Cranberry Apple Juice concentrate
1 13 oz can Coconut Cream (Trader Joe’s is the best value ever at $1 per can)
1 qt unsweetened rice milk or almond milk
1 can pineapple rings with juice
1 10 oz bag fresh or frozen cranberries
Puree all but pineapple in the blender. Cut pineapple rings into tiny wedges. Add juice to blended mixture. Pour puree and pineapple wedges into rotary ice cream freezer or into popsicle molds. Freeze according to manufacturers directions. You won’t even miss the mellos.
