This two minute tomato basil soup is a fast healthy alternative to a Martha Stewart classic that bursts with such flavor, you’ll want to cheer! Before warming, the soup will look pink, but don’t worry. As it simmers it will turn to this lovely tomatoey orange color. 1 quart Classico brand organic spaghetti sauce (or other sugar-free brand you like) 2 (13 ounce) cans unsweet coconut milk or 1 (13 ounce) can Trader Joes thick coconut cream 1 Tablespoon dried basil leaves Combine in blender for smoother soup. Combine in medium saucepan for chunkier results. Warm and serve. Deliciouso! Fun Factor: We are all born creators. And pureed soups make a lovely contrasting canvas for creative expression. With a runny coconut cream, Mock Sour Cream or UnRanch Dressing from the cookbook, try drizzling a circle of white in the center of the soup bowl. Drag a spoon or knife through the circle and Voila!
